This is a seasonal artisan made cheese made using unpasteurised organic milk from the Bartlett brothers own flock of Friesland sheep. This gives the cheese its distinctive sweet, rich and deep characteristic flavour. It is made with vegetarian rennet and is mould-ripened to leave a surface of white or white with green flecks. The smooth creamy texture of this cheese will begin to flow with maturity.

Pleasantly rounded flavour, sheepy but only a little, firm but starting to run agreeably, a pleasant hint of mould to suggest good ripening possibilities.
