Montgomery Mature Cheddar   

This hard cows cheese is made with full fat, unpasteurised milk with traditional animal rennet. At ten months old this cheddar is relatively moist with a slightly rough, granular texture. When young the taste is deep but soft. As it ages it becomes drier and grainier and develops a ‘bite.’

Very sim ilar characteristics to parmesan: hard, not great by itself but great grated on pasta.

Forget those rubbery, 'wangy' cheeses that supermarkets pass-off as cheddar. This is a truly magnificent hard cheese in the old fashioned sense. So tasty without the stingyness, but with a bite. I could eat this all day-infact until the cows come home!
