This is a naturally mould ripened semi-hard cheese made by hand from full fat cows milk. This produces a rind that can vary in colour from a creamy yellow when young developing to a pinkish bloom as the cheese matures through to a light nutty brown in late maturity.
The cheese is similar to Tiskey and Garland without the additives and is then matured for 20 weeks.

very hard - more like Parmesan. Breaks up when cut. Little taste.
