White Lake   

Made from unpasteurised goats milk this is a soft mould ripened hand made cheese. It is best eaten around six weeks from making. It has a mild acidic start giving way to a creamy slightly buttery finish with a hint of goat and a long mellow aftertaste.

I have just had lots of White Lake sandwiched in granary bread with slices of orange and lots of raw baby spinach - absolutely delicious - somehow it brought out the extraordinary fragrance of the cheese even more.
