The lovely cheese is slightly sharp and mildly acidic. It has a welcome fresh taste with a bit of a zing in the finish. Sue, the cheese-maker, describes it as like a creamy white Lancashire with a real zing on the finish. It won the 'best modern British ' cheese in 2008.
