Smart's Single Gloucester
Since 1997 Single Gloucester has posessed a PDO and thus can only be made in Gloucestershire. The makers must own at least one Old Gloucester cow. This has served to preserve the cheese and the artisan cheese makers who produce it today. To make Single Gloucester the morning milk is separated and added to the richer whole milk from the previous evening - it has a single quantity of cream, hence the name! This cheese matures quite quickly and has a wonderful light texture with a cool well balanced taste. It does not cook well as the flavour is lost.
