This is an artisan made small individual cheese made using unpasteurised organic milk from the Bartlett brothers own flock of Friesland sheep. This gives the cheese its distinctive sweet, rich and deep characteristic flavour. It is made with vegetarian rennet and is mould-ripened to leave a surface of white or white with green flecks. The smooth creamy texture of this cheese will begin to flow with maturity.
