Montgomery Mature Cheddar

This hard cows cheese is made with full fat, unpasteurised milk with traditional animal rennet. At ten months old this cheddar is relatively moist with a slightly rough, granular texture. When young the taste is deep but soft. As it ages it becomes drier and grainier and develops a ‘bite.’
