This fresh tasting cheese is the original hard cheese from the Woolsery dairy. It is lightly pressed with a natural rind. The texture is moist and open with a distinctive goaty taste tinged with almonds and pine nuts. In recent years this cheese won both the Gold Medal and the BBC Good Food Magazine Award at the British Cheese Awards.
