Washed Rind cheeses are mild in flavour but strong in aroma. They are characterised by an orangey, brown rind having been washed in brine, cider, wine or herbs. The creamy texture and subtle favour are a contrast to the pungent smell. They have high moisture content and thus mature quite quickly.

This rind washed cows milk cheese is made from pasteurised milk by Sue Proudfoot at Whalesborough near Bude in Cornwall. It is a pungent rind washed soft cheese with a creamy flavour. It is washed in a local cider three times a week to give it an edible rind which is burnt orange in colour and slightly sticky. It has to be eaten with the rind to be enjoyed at its best.

Ogle Shield [ Cow Washed Rind Veg Unpas ]

Take Jersey Shield, a hard creamy cheese made from Jersey cows milk, and wash it in a weak brine solution so that a mould and a hard rind cannot form and you have Ogle Shield. The cheese itself is still hard but has a sticky orange surface, a pungent aroma and a mellow flavour.

This is a little rind washed(smelly)gem from Lubborn. It has an orangey softish rind which is most definitely edible and the pungency of the aroma increases as it matures. The flavour is mellow and quite gentle without a hint of bitterness but with a piquancy which is all its own.

A washed rind cheese first made by Cisterian monks in Dymock. It has a sticky orange rind with a pungent spirited aroma. The texture can vary from firm to soft depending on the season. It takes its name from the variety of pear used in the Perry wash.

Take a Caerphilly from Chris Duckett, marinade it in herbs and rind wash it in wine from Kent and you have Tornegus. It has a speckled orange rind which is crystally and slightly sticky with a semi-hard open textured interior and a rustic flavour.
