Mould ripened soft cheeses are usually unpressed thus have a high moisture content. They ripen within a matter of weeks. All Bries and Camemberts are surface-ripened and mature from the outside in with the help of a penicillium mould. A fully mature cheese is creamy throughout and smells fresh and rather like mushrooms when young, graduating to a boiled cabbage aroma upon maturity. Always make sure the cheese is eaten before a pungent ammonia smell develops.
