A blue cheese can be moist and paste like or hard and crumbly. The blue mould is a strain of penicillium and is introduced at the start of the cheese-making process. The blueness is allowed to develop as the cheese matures by piercing holes in the cheese using stainless steel rods. This allows air into the cheese and the mould grows along the line of the rod and throughout the cheese.

This is a delicious creamy blue which is made for Bath Soft under contract, still using their own organic milk. Graham found the blue mould was affecting their other soft cheeses but Bath Blue was too good to lose. It is firm yet soft, beautifully veined with a medium to strong blue tang.
