A hard cheese such as Cheddar, Devon Oke or Double Gloucester often has a thick rind, is waxed or oiled and cloth bound. To make a hard cheese the curd must be cut into small pieces, which can be anything from a bean to a grain of rice in size, to allow the whey to drain as much as possible. Recipes vary and salt can be added to the chopped curd or added later as a brine wash. The cheese is pressed for some time and left to mature for at least a few weeks, if not years before being ready for sale.

The high quality of milk used results in this wonderful full flavoured unpasteurised caerphilly. It is aged for around six weeks in a cellar under the farmhouse at Westcombe Dairy. A natural spring flowing through the cellar keeps the humidity high and a plethora of amazing moulds leads to formation of the beautiful natural rind. The zesty tones of the younger cheese are retained alongside some amazingly mellow flavours and a wonderfully soft texture, particularly near the rind.

Charles Martell's Double Gloucester [ Cow Hard Veg Unpas ]

Please do not confuse the real taste of Double Gloucester with some of the plastic stuff you can buy elsewhere! This is a cheese full of flavour, a little drier than many but with a taste that lingers. In my view this is best served with an apple and a glass of beer!

Charles Martell's Single Gloucester [ Cow Hard Veg Unpas ]

The crust on this cheese fascinates me! It is quite soft, yet quite firm and almost leathery. It can be furry, grey and moist but at times dry and crusty. The taste of this young cheese which is matured for only around six weeks is fresh and clean and I always come back for more.

Milk from their own herd at Stockbeare Farm, near Okehampton is used to make this hard full fat, rinded, brine washed cheese to a 17th century recipe. It has a buttery taste with lots of flavour and a nutty finish.

Harefield [ Cow Hard Veg Unpas ]
Smart's Traditional Gloucester Cheese, Gloucestershire

'Harefield' is made in a similar way to Single Gloucester but matured for at least a year. The result is a hard tangy cheese which can be likened to Parmesan. Diana keeps this cheese for her Farmers market customers but I manage to persuade her to let me have some every now and then! If you would like to know when it is available please drop me a line.
