Now some say that to get the real flavour of an artisan made cheese the milk needs to be unpasteurised. All I know is that the flavour of the unpasteurised cheeses I have tasted has a depth which is fantastic and long lasting.

Aged Caerphilly [ Cow Hard Veg Unpas ]
Duckett's Caerphilly Ltd., Somerset

The high quality of milk used results in this wonderful full flavoured unpasteurised caerphilly. It is aged for around six weeks in a cellar under the farmhouse at Westcombe Dairy. A natural spring flowing through the cellar keeps the humidity high and a plethora of amazing moulds leads to formation of the beautiful natural rind. The zesty tones of the younger cheese are retained alongside some amazingly mellow flavours and a wonderfully soft texture, particularly near the rind.

This semi-hard washed rind cheese is made with unpasteurised cow’s milk and traditional rennet. It develops a natural rind of mottled orange/brownish colour derived from the ripening mould and the natural flora of the area. It can be eaten young but will develop strength of flavour as it matures.

This is a delicious creamy blue which is made for Bath Soft under contract, still using their own organic milk. Graham found the blue mould was affecting their other soft cheeses but Bath Blue was too good to lose. It is firm yet soft, beautifully veined with a medium to strong blue tang.

This is a seasonal artisan made cheese made using unpasteurised organic milk from the Bartlett brothers own flock of Friesland sheep. This gives the cheese its distinctive sweet, rich and deep characteristic flavour. It is made with vegetarian rennet and is mould-ripened to leave a surface of white or white with green flecks. The smooth creamy texture of this cheese will begin to flow with maturity.

Made by the Exmoor Blue Cheese Company on the edge of Exmoor this is a goats cheese with a difference! When young it is delicate and quite soft, with background flavours of Exmoor. As it matures it becomes harder, with a slight grain, but retains its sweetness.

Cerney Blush [ Goat Soft Veg Unpas ]
Cerney Cheese, Gloucestershire

This soft goats cheese is similar to Cerney Pepper but instead of being coated with peppercorns it is soaked in port to give it a glorious colour and a sweetish finish. Barbara and Angus as Cerney Cheese are still developing it with the help of their chief tasters-their children!
