Philip Rainbow is Director and cheese maker at The Somerset Cheese Coumpany having spent many years working at Monastery Cheese at Bridgwater. He operates from a dairy hithertoo used by John Longman who made cheese on contract for a number of local dairies (Daisy and Co being one). Co-Directors Nick and Anita Robinson provide the finance, sales and administrative expertise needed. Philip makes a similar range of cheeses to those previously made at Monastery Cheese and continues to supply his previous employer. They use all types of milk except cows! The Ewe and buffalo milk come up from Devon and the goats milk is locally produced.
Philip rents the dairy to Greens of Glastonbury for two days each week which not only helps with his own rent but has also provided the opportunity for Greens to provide help and support with paperwork which is rather burdensome.
