Mary Holbrook originally started making cheese because she had two goats who gave her more milk than she could drink. She now has ninety and her exquisite cheese is world renowned.
She runs her farm on organic lines and employs traditional cheesemaking methods.
She did at one time make ewes' milk cheese too but has now sold her flock and given the recipe for Little Ryding to the Bartlett Brothers at Wootton Organic.
