Cranborne Chase Cheese, Dorset
The dairy at Manor Farm, Ashmore recently moved from a small one-man room to a larger creamery that was vacated after Ashmore Cheese moved to larger premises. Richard Biddlecombe managed the dairy herd as Farm Manager until it sold. He is now able to concentrate on the cheese. The dairy comprises two vats designed for the soft, mould ripened cheeses for which Cranborne Chase Cheese is renowned. Each St Nicholas is turned by hand in a truly artisan process.
Alison who joined the company late in 2004 assists Richard and together they keep the dairy spotless and their meticulous attention to detail produces some beautiful cheeses.
I was delighted to taste a new cheese they are developing made to a Bel Paese recipe. It is firm and elastic in texture and sweet with nutty overtones. It is now available for sale known as 'Alderwood' and has featured in the March 2006 members selection to great acclaim.
